Broccoli Carrot Salad

We made a meal out of this and it was satisfying, but of course it can be used as a side dish.


SALAD INGREDIENTS:

  • 4 cups broccoli

  • 2 cups carrots

  • 1/4 cup of onions

  • 1/4 cup dried cranberries

  • Salt, pepper, garlic powder, turmeric



DRESSING INGREDIENTS:

  • 3 tablespoons avocado mayonnaise

  • 1 teaspoon mustard seed powder

  • 2 tablespoon apple cider vinegar, balsamic vinegar or your favorite flavored balsamic. My current favorite is Honey & Ginger White Balsamic.

  • 1 tablespoon lemon juice

  • ¼ cup water

Whisk together and let sit.



INSTRUCTIONS:

  • Process the broccoli and carrots (I used my Vitamix).

  • Mix vegetables together and add onions, cranberries and seasonings.

  • Stir the Dressing ingredients together and stir into salad.

  • Put in fridge to chill for at least an hour to absorb the dressing.
