Dairy-Free Seven Layer Delight

First, I apologize that I do not have a photo of this delicious masterpiece - at least at the time of this original posting.


Using the recipe from the Loaded Tostado, it's easy to make this Seven Layer Delight that can be used as a seven layer dip or as a mealtime dish. The flavors and satiety is divine.


Here are the recipes and instructions again:


"Sour Cream"

  • 1.5 cups of raw cashews

  • ¾ cup of water

  • juice from 1 lemon

  • 2 Tb of apple cider vinegar

Blend at high speed in blender until whipped and forms a thick cream. Set aside in fridge.


Super Simple Refried Beans


  • 1 can of organic Pinto Beans

  • 1 teaspoon of avocado oil

  • ⅛ cup of water

  • Seasonings of choice. I used Himalayan salt, pepper, garlic powder and chili powder

Pulse beans in a processor or blender until mashed. Put in skillet with remaining ingredients and stir until warm.




Veggie Filling


  • 2 cups of chopped bell peppers (I prefer orange and red)

  • 1.5 cups of chopped mushrooms (I used Baby Bellas)

  • 1 cup of diced onion

  • Seasonings of choice. I used smoked paprika, garlic powder, Himalayan salt, pepper, cumin, chili powder, turmeric.

Put all veggies in a skillet with about ¼ cup of water, cook stirring occasionally until tender.



My Favorite Easy Peasy Guacamole


  • 3-4 Avocados - mashed

  • ⅓ (approx) cup diced onion

  • ⅓ (approx) cup diced tomatoes

  • ½ lemon juiced

  • Seasonings: Himalayan salt, black pepper, garlic powder and more garlic powder



LAYER!


In a glass dish, layer from bottom to top:

  1. Beans

  2. Veggie Filling

  3. Shredded Lettuce

  4. Diced Tomatoes

  5. Sour Cream

  6. Guacamole

  7. Sliced Olives
