I simplified an earlier version of this dish and honestly, I like it just as well, if not better. Less ingredients = more ease and less calories per serving.
INGREDIENTS
1 C of dry Quinoa cooked as directed on package (or 4 cups of riced cauliflower)
1 Jar (2.5 cups of favorite marinara sauce. (I use Organic Marinara From Tuscany - Kirkland Brand from Costco)
1 - 1.5 lbs of ground turkey.
¼ chopped onion
½ cup chopped sweet bell pepper
¾ cup chopped mushrooms (I use baby bella)
1 cup of fresh spinach
½ cup of grated mozzarella cheese
3-4 large sliced green or black olives
INSTRUCTIONS
Cook the quinoa (or cauliflower). Season with salt, pepper, dried onion, paprika, basil, oregano, garlic powder, cumin, all season
Brown the turkey and add the sauce, onion, bell pepper and mushrooms and season with salt, pepper, dried onion, paprika, basil, oregano, garlic powder, cumin, all season, turmeric. Simmer.
Layer the cooked quinoa in a baking dish spritzed lightly with nonstick spray or avocado oil.
Then layer the meat mixture, fresh spinach, grated cheese and olives.
Sprinkle more basil and oregano on top.
Bake in a preheated 350º oven for about 20 minutes.
