Frozen Yum Bites (4 ingredients, no bake)

Craving something sweet, healthy and COLD during these hot summer days brought about experimenting with some of my favorite ingredients. After a couple of attempts, the final product is perfect. At least for me!


Using the ingredients as I listed in 24 mini muffin cups, each little bite is only 38 calories yet loaded with flavor.


INGREDIENTS:
  • 2 Large Bananas, mashed with fork

  • ¼ cup of Simple Truth Organic 72% Cacao Chocolate Chunks

  • 2 TB Kirkland Brand Organic Peanut Butter (Can use 1 TB, but is a little softer)

  • ¼ cups of chopped or broken pecans. Raw or my EasyRoasted version)


INSTRUCTIONS:
  • Melt cacao chunks and peanut butter together until soft, then stir.

  • Add mashed bananas and chopped nuts. Stir well.

  • Spoon into mini muffin pan and freeze for several hours. (I use silicon pans for frozen items)

  • Pop out of muffin cups and store in ziplock baggie in the freezer.

  • Makes 24 mini muffin bites.

(can also be made into mini loafs for "Ice Cream Bars")
