An idea, the ingredients and something I enjoyed in my days before my lifestyle change resulted in not missing out of that enjoyment.
I grew up on "corny" dogs. You know, the cornbread batter wrapped around a hot dog on a stick? After going grain-free eight years ago, I honestly forgot about them. For whatever reason, I thought about them yesterday and decided to experiment with making my own. Let me tell you, they hit the spot.
They look like a hot dog, but taste like a corn dog and so simple to make. Here's what I did:
INGREDIENTS:
A batch of Cornless Corn Bread (made without the baking powder and added ⅛ tsp of Amoretti Sweet Corn Extract (I'm not an affiliate, just a product that I like).
Organic chicken breakfast sausage links. (or whatever your favorite breakfast links)
INSTRUCTIONS:
Preheat oven to 350º.
Make the cornless bread batter and spoon it into a silicon mini loaf pans or a muffin tin.
Stick a sausage link into each and bake for about 30 minutes. (My little mini loaf pans made 9.)
Top with your favorite condiment. (I used mustard on some and catsup on others.)
