Mom's Pea Salad

I grew up eating pea salad at family functions as I'm sure many others did as well.


Not long before my mom moved to Heaven, she made pea salad for one of our family dinners and it brought back so many childhood memories. I knew she had made some healthier alterations, so I asked her for her recipe. Here is what she gave me and it's so, so good!


INGREDIENTS:

2 Cans of Del Monte Sweet Peas, drained

2 boiled eggs, cut in small pieces

1/4 cup chopped onion

1/4 cup finely chopped carrots

1/4 cup finely chopped celery

1/4 cup (or more) white cheddar cheese, cut into very small cubes

2 Tb of Avocado Mayonnaise

1 Tb sweet pickle relish

Season to taste with Himalayan salt, black pepper, garlic powder,


INSTRUCTIONS:

Mix all ingredients together and let sit overnight for best flavors.

ENJOY!
