If you saw the post for Open-Faced Meatless Mound of Goodness, you know I made some bread flats of my favorite grain-free No-Corn Bread recipe recently and we had that delicious experiment for dinner last night.
Today for lunch,
I took a flat and cut it in half,
put a little Avocado Mayonnaise on it,
some lettuce,
sliced onion,
sliced red bell pepper,
sliced tomato
and made a meal out of it.
