Oh My Brussels Sprouts!

A dear and precious friend (and one of my very first Ready & WILLING! Wellness Warriors), shared a photo of a salad she had purchased pre-made from a chain health food grocer. It looked so good, there was only one issue...it included preservatives in the list of ingredients.


So of course I decided to make an attempt at recreating it. Although I haven't tasted the original to compare, what I can say is, THIS IS SO GOOD and will become a regular at my home.


Brussels Sprouts Salad


SALAD INGREDIENTS:

  • 2 Cups of grated/chopped Brussels sprouts*

  • 1 T of finely chopped onions*

  • ¼ Cup roasted pecans (roast raw nuts in oven or stove top with a little avocado oil and salt, garlic powder, chili powder, Worcestershire Sauce, etc.)

  • ¼ Cup dried cranberries*

  • 1 tsp ground flax seed (optional)

  • 1 oz grated fresh parmesan cheese (not canned)

  • add seasonings: salt, pepper, pinch of garlic powder, pinch of turmeric

*organic ingredients


  • Mix all together and stir in dressing below


DRESSING INGREDIENTS:

  • 1 T ground mustard seed

  • 1 T plus 1 tsp water

  • 1 tsp apple cider vinegar

  • 1 T avocado mayo

  • 1 tsp erythritol


  • Whisk together and mix into salad.

  • Put in the fridge to chill and marinate.
