If you've not seen the recipe for my No-Corn Bread recipe, you MUST try it.
I used it for making my bread to use for this mound of goodness. It really is delicious.
I will begin by saying that I do not care for mushrooms. Or at least I used to not care for them. Now they have become a regular in our household as a meat substitute since going Primarily Plant in our eating.
As usual, I experimented and discovered this delight that I will make again and again.

OPEN-FACED MEATLESS MOUND OF GOODNESS recipe:
First the Bread made into the four flats.
FILLING:
3 large Baby Bella Mushrooms, chopped
¼ cup of chopped onion
½ cup of chopped orange Bell Peppers (any color will do, but orange, yellow and red have more flavor and more nutritional value than green)
my favorite spices: Himalayan salt, black pepper, garlic powder, turmeric, cumin, chili powder, etc.
¼ cup of water
Put all ingredients in a skillet on medium heat and cook until tender.
CREATING the MOUND:
Put the bread on a plate and layer with:
shredded lettuce
meatless filling
sliced tomatoes
dollop of guacamole
DIG IN AND ENJOY!
