Dairy-free (without optional ingredient) and Grain-Free
Easy, quick, DELISH
I've been experimenting again.
My sweet hubby surprised me today by taking an unexpected day off, which means my plans of studying are out the window. So what should I do? Feed him, of course!
It's been cold and I've been hungry for soup. I decided to experiment and create a recipe for a broccoli - cheese soup. The result had him raving about how good it is and going back for seconds.
I'd say this experiment was a success.
INGREDIENTS:
I use all organic ingredients:
1 cup raw cashews
2 cups water
2 cups almond milk
3T nutritional yeast
2 garlic cloves (can use minced garlic or garlic powder)
4 cups broccoli
I lb riced cauliflower
¼ cup diced onion
(¼ cup plain yogurt - optional)
Seasonings to taste: Himalayan salt, pepper, garlic powder, cumin, turmeric, chili powder, Seasoning Blend (I use Kirklands Signature Organic No-Salt Seasoning)
DIRECTIONS:
Put cashews, water, milk, nutritional yeast, garlic and seasonings in a high power blender. Blend on high until smooth. Add broccoli and pulse until fine.
In a pot, add riced cauliflower and onion and heat until tender (can add ¼ cup water). Then add soup mixture from blender, (optional yogurt) and season to taste.
Heat and enjoy!
