Quinoa Bowl

While on a recent trip, I discovered a dish I really enjoy from my favorite chain-restaurant salad place. I decided to try and mimic it and have to admit, it's as good or maybe even better than the original.


Feel free to try it as-is or add your own ingredients, but this was the perfect combination of flavor for us. The taste, with all of these combined ingredients, was outstanding. This will be regularly made and consumed in our home - it was a hit with both me and my hubby.



INGREDIENTS (per serving)

  • favorite fresh greens (I used baby butter lettuce)

  • ¼ cup cooked qunioa

  • ¼ cup black beans, drained

  • chopped bell pepper

  • chopped onion to taste

  • chopped tomato

  • grated mozzarella cheese

  • 1 Tb guacamole (or ¼ avocado)

  • 1 Tb hummus

  • 1 Tb plain greek yogurt

INSTRUCTIONS

  • Layer greens, quinoa, beans, vegetables, cheese and dollop the guac, hummus and yogurt on top. Mix all the ingredients together to get the best flavorful quinoa bowl and...
